Turkey Loaf

With the holidays over, it’s time for us to get back to eating right.  Fortunately, we both enjoy turkey and chicken so I’ll probably be posting a lot more poultry recipes that we enjoy.  Here’s one of our favorites.

Ingredients:

  • 3/4 cup coarsely crushed Wheaties or Cornflakes (for a nice change of pace Wheaties adds a different flavor when used in place of cornflakes)
  • 1/4 cup oat bran or 1/4 cup cereal crumbs
  • 3/4 cup milk
  • 2 egg whites
  • 1/4 cup chopped onion
  • 1/4 cup chopped green bell pepper
  • 1/2 teaspoon Watkins Sage
  • 1/2 teaspoon salt
  • 1/8 teaspoon Watkins granulated pepper
  • 1 teaspoon parsley flakes
  • 1 pound raw ground turkey or turkey sausage

Topping:

  • 2 tablespoons brown sugar
  • 1/4 cup catsup
  • 1 teaspoon Watkins Dry Mustard
  • 1/4 teaspoon Watkins Nutmeg
  • 1/8 teaspoon Watkins Ginger

Directions:

  1. Preheat oven to 350 degrees.
  2. In a large owl, combine cereal crumbs, oat bran, milk, egg whites, onion, green pepper, sage, salt, pepper and parsley; mix well.
  3. Add ground turkey and blend thoroughly.
  4. Turkey mixture should be firm enough to shape; if not, add more cereal crumbs.
  5. Spoon mixture into a shallow 2-quart casserole and form into a dome shape or press into a 9″x5″ loaf pan; set aside.
  6.  In a small bowl, combine brown sugar, catusp, mustard, nutmeg and ginger; pour over loaf.
  7. Bake, uncovered, 1 hour. Serve immediately.

I like to serve this loaf with Mashed Sweet Potatoes.
