Tender Chicken Breasts in Tarragon Sauce

We’re fortunate in our house that we both love chicken.  We could, and have, eat it several times a week.  There are so many ways of cooking this simple bird that you could eat it every day of the year and never make the same dish twice.  Here’s a very simple and delicious bake chicken recipe.

Ingriendts:

  • 2         chicken breast, boneless and skinless
  • 1         teaspoon melted low-fat margarine
  • 1/2      cup white wine
  • 1/4      teaspoon Watkins Tarragon
  • 1/2      teaspoon Watkins Onion Powder
  •           Salt and pepper to taste
  • 2         teaspoons cornstarch
  • 2         tablespoons water

Directions:

  1. Preheat oven to 350 degrees.
  2. Rinse chicken and pat dry.  Place in a medium-size shallow baking dish.
  3. In a small bowl, blend margarine, wine, tarragon, onion powder, salt and pepper; pour over chicken.
  4. Bake, uncovered, 30 minutes or until tender, basting occasionally with juices.
  5. Pour juices from cooked chicken into a pan; set over medium heat.
  6. Blend cornstarch with water.
  7. Add to juices, stirring constantly until thickened.
  8. Spoon over chicken and serve.

Yield: 2 servings.
