Simple Rolls

Ingredients:

6 1/4    cup   all purpose flour

2           cup warm water

1/3       cup sugar

3/4       cup cooking oil

2           envelopes active dry yeast

2           teaspoons salt

2           eggs

Nonstick cooking spray

Directions:

In a large mixing bowl mix 3 cups flour, sugar, yeast and salt.  Stir together the eggs, water and oil; add to flour mixture.

Beat with electric mixer on low speed for 30 seconds.  Beat on high speed for 3 minutes.  Using a wooden spoon, stir in remaining flour.

Transfer dough to a large greased bowl; turn once.  Cover; refrigerate 2 to 24 hours.

Stir dough down.  Let dough rest 10 minutes.  Spray a 13x9x2 inch baking pan with nonstick spray.  Turn dough out onto a well floured surface.  Roll dough to a 12×8 inch rectangle.  Cut into 24 2×2 inch rolls.

Transfer rolls to pan.  cover; let rise in a warm place until double in size, abut 40 minutes.  Bake in a 375 degree oven for 20 minutes or until golden brown.

Makes 24.
