Rice Lasagna

We had this one for supper a few nights ago and it was a big hit.  No need for lasagna noodles since you use rice instead.  We were both surprised at how good it turned out.

Ingredients

  • 1      cup rice, uncooked
  • 2      eggs, slightly beaten
  • 3/4  cup Parmesan
  • 2       cup mozzarella, shredded
  • 1/2  cup cottage cheese
  • 1 lb. (15.5 oz) spaghetti sauce
  • 1/2  teaspoon garlic powder
  • 2       teaspoon garlic

Directions

  1. Preheat oven to 375 degrees.  Coat a 13 x 9 inch baking dish with cooking spray.
  2. Prepare rice according to directions.  Cool slightly.  Combine rice, eggs, 1/4 cup Parmesan, mozzarello and cottage cheese in bowl.  Mix well; set aside.
  3. Spray skillet and add meat.  Brown meat and drain excess fat.   Add spaghetti sauce, garlic and garlic powder; cook until thoroughly heated.
  4. Spoon 1/2 rice mixture in bottom of baking dish.  Cover with 1/2 meat sauce.  Cover with Parmesan cheese.  Repeat layers.  Top with remaining Parmesan cheese.
  5. Bake 15 to 20 minutes or until heated through.

Serves 6 to 8
