Pepper-Jack Cheese Stuffed Burgers

 Like a little spiciness in your meals?  Here’s a nice variation for your burgers.  The recipe is calls for grilling them but you can make them on the stove just as easily.

Ingredients:

  • 1 1/2 pounds lean ground beef
  • 2 ounces Pepper-Jack cheese, thinly sliced
  • Salt and pepper
  • 4 hamburger buns
  • 4 lettuce leaves
  •  4 slices tomato

Directions: 

  1. Divide ground beef into 8 equal portions; shape each into 4-inch diameter patties.
  2. Place equal amount of cheese in center of 4 patties.
  3. Top with remaining 4 patties; press edges together to seal securely.
  4. Place patties on grill over medium coals.
  5. Grill 10 to 12 minutes to desired doneness, turning once.
  6. Season with salt and pepper to taste.
  7. Toast buns on grill for 1 minute, if desired.
  8. Arrange 1 lettuce leaf on each bun bottom; top each with 1 burger and 1 tomato slice.
  9. Cover with bun tops.
