Peanut Chip Banana Bread

Here’s a recipe that makes a great snack but can be used as a dessert because you put a frosting on the bread.  This is so rich that it just doesn’t seem like a quick bread.

Ingredients:

  • 2 1/2 cups flour
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 tablespoon Watkins baking powder
  • 3/4 teaspoon salt
  • 1/4 teaspoon Watkins cinnamon
  • 1 cup mini chocolate chips (6 oz)
  • 1 cup mashed bananas (2-3)
  • 1 cup milk
  • 3/4 cup peanut butter
  • 1 egg
  • 3 tablespoon vegetable oil
  • 1 teaspoon Watkins Clear Vanilla

Frosting

  • 3 tablespoons peanut butter
  • 1 cup 10x sugar
  • 1 teaspoon Watkins Clear Vanilla
  • 2 tablespoons butter or margarine
  • 1 tablespoon milk

Directions:

  1. In mixing bowl combine first six ingredients.
  2. In another bowl combine bananas, milk, egg, peanut butter, oil and vanilla; mix well.
  3. Stir into dry ingredients til combined.
  4. Add chocolate chips.
  5. Spoon into two greased 8x4x2 loaf pans.
  6. Bake at 350 degrees for 50-55 minutes.
  7. Cool in pans for 10 minutes, then remove from pans and cool on wire racks.

Frosting:

  1. Melt peanut butter and butter in small saucepan; remove from heat.
  2. Stir in 10x sugar, milk and vanilla.
  3. Frosts 2 loaves.
