Here’s a recipe that makes a great snack but can be used as a dessert because you put a frosting on the bread. This is so rich that it just doesn’t seem like a quick bread.
Ingredients:
- 2 1/2 cups flour
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1 tablespoon Watkins baking powder
- 3/4 teaspoon salt
- 1/4 teaspoon Watkins cinnamon
- 1 cup mini chocolate chips (6 oz)
- 1 cup mashed bananas (2-3)
- 1 cup milk
- 3/4 cup peanut butter
- 1 egg
- 3 tablespoon vegetable oil
- 1 teaspoon Watkins Clear Vanilla
Frosting
- 3 tablespoons peanut butter
- 1 cup 10x sugar
- 1 teaspoon Watkins Clear Vanilla
- 2 tablespoons butter or margarine
- 1 tablespoon milk
Directions:
- In mixing bowl combine first six ingredients.
- In another bowl combine bananas, milk, egg, peanut butter, oil and vanilla; mix well.
- Stir into dry ingredients til combined.
- Add chocolate chips.
- Spoon into two greased 8x4x2 loaf pans.
- Bake at 350 degrees for 50-55 minutes.
- Cool in pans for 10 minutes, then remove from pans and cool on wire racks.
Frosting:
- Melt peanut butter and butter in small saucepan; remove from heat.
- Stir in 10x sugar, milk and vanilla.
- Frosts 2 loaves.
