Grilled Cheese Mini Meat Loaf Recipe

I was reminded today of this great way make an inexpensive yet delicious alternative to hamburgers.    This mini meat loaf recipe is great for camping or backyard  cookouts.  Give them a try next time you want to change things up at the dinner table.

Ingredients:

  • 1 Pound extra-lean (at least 90%) ground beef
  • 1/4 cup plain bread crumbs
  • 3 Tablespoons ketchup
  • 1 teaspoon onion salt
  • 1/2 teaspoon pepper
  • 1 teaspoon ground red pepper
  • 1 egg
  • 1/2 cup shredded Cheddar cheese (2 oz)

Directions

  1. In large bowl, mix all ingredients.
  2. Pat mixture into an  8-inch square.
  3. Cut into 4 squares.
  4. Slowly cook over medium heat, turning once, until done.

    Man, my grandmother was from Sicily and she made the most amazing meatballs I ever tasted, like you had died and gone to meatball heaven. Sadly, she didnt leave a recipe for me so I’ve been trying to figure it out by myself… slowly working my through meatball recipes. I still cant figure out what her secret ingredient was though!!!
