Easy Blackberry Cobbler

The strawberries are getting ripe here in Southern Indiana so it’s time to start thinking about some great berry recipes.   This one is for a great tasting blackberry cobbler that I thought I’d share with you so you’ll be ready when they are.

Easy Blackberry Cobbler

Ingredients

  • 4 C frozen blackberries
  • 1 Tablespoon lemon juice
  • 1 Cup flour
  • 1 Cup sugar
  • 1 Large Egg
  • 6 Tablespoons melted butter

Directions

  1. Preheat oven to 375
  2. Grease an 8″ bakind dish
  3. Add the berries
  4. Sprinkle lemon juice over berries
  5. In a medium bowl, mix the egg, sugar and flour until it resembles coarse meal.
  6. Sprinkle over the berries.
  7. Drizzle butter over the top
  8. Bake 40-45 minutes until lightly browned
  9. Let stand 10 minutes
  10. Serve with whipped cream or vanilla ice cream
