Creamy Peanut Ginger Dip

Ingredients:

1 cup creamy peanut butter

1/4 cup soy sauce

6 T apple cider vinegar

2 cloves garlic

1 inch cube peeled ginger

1/2 cup roughly chopped cilantro (or less to taste)

1/4 cup hot water

Directions:

Combine everything but the water in a food processor.

Pulse until smooth, about 20 seconds, while gradually adding the hot water.

Stir with a spatula to make sure all the ingredients are mixed well (the soy sauce and vinegar can settle on the bottom). Makes 2 cups.
