Here’s a cookie that’s a perfect treat on cold days with a cup of tea. Besides tasting great they are a nice low calorie snack.
Ingredients:
- 1 cup butter, softened
- 1 cup sugar
- 1-3 0z cream cheese
- 1/2 teaspoon salt
- 1/2 teaspoon almond extract
- 1/2 teaspoon vanilla extract
- 1 egg yolk
- 2 1/4 cups flour
Directions:
- In medium mixing bowl mix butter and sugar; add cream cheese and beat until fluffy. Then add the almond, vanilla and egg yolk.
- In another bowl mix flour and salt. Add the flour mixture to wet mixture and mix well.
- Refrigerate at least 1 hour, I refrigerate overnight.
- Using a teaspoon, roll a one inch ball and place on an ungreased cookie sheet and grease bottom of a glass and dip in sugar and flatten ball of dough. Bake in a 375 degree oven for 8 to 10 minutes or until just golden around the edges. You may frost if desired.
Makes 72 one inch cookies
