Here’s a cookie that’s a perfect treat on cold days with a cup of tea.  Besides tasting great they are a nice low calorie snack.

Ingredients:

  • 1  cup butter, softened
  • 1  cup sugar
  • 1-3  0z cream cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon almond extract
  • 1/2 teaspoon vanilla extract
  • 1 egg yolk
  • 2 1/4 cups flour

Directions:

  1. In medium mixing bowl mix butter and sugar; add cream cheese and beat until fluffy.  Then add the almond, vanilla and egg yolk.
  2. In another bowl mix flour and salt.  Add the flour mixture to wet mixture and mix well.
  3. Refrigerate at least 1 hour, I refrigerate overnight.
  4. Using a teaspoon, roll a one inch ball and place on an ungreased cookie sheet and grease bottom of a glass and dip in sugar and flatten ball of dough.  Bake in a 375 degree oven for 8 to 10 minutes or until just golden around the edges.  You may frost if desired.

Makes 72 one inch cookies
