Chocolate-Covered Cherry Cookies

My favorite time of year is almost here.  As soon as Thanksgiving is over I start my Christmas baking.  I LOVE to bake cookies and give them away to family and friends at Christmas.  I thought I’d share some of my favorite cookie recipes with you over the next few days. I hope you enjoy them.

INGREDIENTS

  • 1 1/2   cup flour
  • 1/4 teaspoon baking soda
  • 1/2   cup Watkins Cocoa
  • 1    egg
  • 1/2    cup butter
  • 1 1/2 teaspoon Watkins Clear Vanilla
  • 1    cup sugar
  • 48 undrained maraschino cherries (10 oz. jar)
  • 1/4    teaspoon salt
  • 16-ounce package chocolate chips
  • 1/4    teaspoon Watkins Baking Powder
  • 1/2   cup sweetened condensed milk

DIRECTIONS

  1. In a mixing bowl, combine flour and cocoa; set aside.
  2. In a large mixing bowl, combine the butter with an electric mixer on medium speed for 30 seconds or until softened.
  3. Add sugar, salt, baking powder and baking soda; beat until well combined.
  4. Add egg and vanilla; beat well.
  5. Gradually beat in flour mixture.
  6. Shape the dough into 1 inch balls; place on ungreased baking sheets.
  7. Press a thumb into the center of each ball to form an indentation.
  8. Drain the maraschino cherries, reserving the juice.
  9. Place a cherry inthe center of each cookie.
  10. In a small sauce pan, combine the chocolate pieces and sweetened condensed milk; heat until the chocolate is melted.
  11. Stir in 4 teaspoons of the reserved cherry juice.
  12. Spoon about 1 teaspoon of the frosting over each cherry, spreading to cover the cherry.
  13. Bake in a 350 degree oven about 10 minutes or until done.
  14. Remove to wire racks and cool.

Makes 48 cookies

These cookies freeze very nicely so you can make them a few weeks ahead of time and just thaw them out.  If you are going to be mailing them, freeze them first, then just box up the frozen cookies and let them thaw out while enroute to their destination.
