Chicken Noodle Soup

We love chicken and when it gets cold out, I love to make up a pot of chicken soup. Here’s the way I do it.

INGREDIENTS

  • 4 chicken leg quarters
  • 2 medium onions, chopped
  • 4 whole carrots, pealed and chopped
  • 2 ribs of celery, chopped
  • 1 teaspoon salt
  • 1 teaspoon Watkins Pepper
  • 1 bay leaf
  • 1 teaspoon Watkins Thyme
  • 1/2 cup barley
  • 2 cups noodles
  • 1 T Watkins chicken soup base

DIRECTIONS

  1. Fill a stock pot with water and put the chicken leg quarters in and bring to a boil
  2. llower heat and simmer for 1 hour. Remove chicken legs quarters and let cool.
  3. Once cooled, debone chicken and put the bones back into the stockpot with the vegetables and seasonings.
  4. Simmer for 3 hours.
  5. Pour the mixture into a strainer and pour liquid back into stockpot.
  6. Add fresh vegetables and seasonings with the barley, soup base and uncooked noodles.
  7. Simmer for 45 minutes to an hour and then add your chopped chicken.
  8. Taste to see if more seasonings are needed.
