Ingredients:
1 1/2 cups cottage cheese
4 eggs
1/2 cup cream cheese
1/3 cup plus 2 teaspoons all-purpose flour
1/3 cup instant nonfat dry milk powder
2 tablespoons plus 2 teaspoon granulated sugar or honey
1/2 to 1 teaspoon grated lemon peel, or to taste
1/2 teaspoon Watkins Clear Vanilla or Watkins Almond Extract
Dash salt
4 graham crackers (2 1/2-inch squares), made into crumbs or
1 1/2 ounces ready-to-eat crunchy nutlike cereal nuggets
Directions:
Preheat oven to 325 degrees. Spray 10 x 6 x 1 3/4 inch glass baking dish with nonstick cooking spray; set aside.
In blender container combine all ingredients except cracker crumbs (or cereal) and process until smooth; pour mixture into sprayed pan and bake for 20 minutes (mixture will be slightly set). Sprinkle crumbs (or cereal) evenly over cake and continue baking until cake is golden brown and edges pull away from sides of dish, 25 to 30 minutes longer. Let cool, then cover and refrigerate until chilled. To serve, cut into eight 2 1/1 x 3-inch bars.
