			<content:encoded><![CDATA[<p>Here&#8217;s a great little pita pizza that is easy to make, tastes great and best of all is healthy.  Give it a try and I&#8217;m sure you&#8217;ll agree.</p>
<p><strong>Ingredients</strong><br />
1 whole wheat pita<br />
¼ c low fat pizza sauce<br />
1 portion cooked chicken breast sliced<br />
¼ red bell pepper sliced<br />
¼ yellow bell pepper sliced<br />
¼ small zucchini, sliced<br />
¼ reduced-fat shredded mozzarella cheese<br />

<strong>Directions</strong><br />
1. Preheat oven to 425 degrees<br />
2. Place the pita on a baking sheet.  Spoon pizza sauce evenly over the pita.  Top with sliced chicken, peppers, zucchini and cheese<br />
3. Bake for 10-12 minutes or until the cheese is melted and the pizza is heated through<br />
4. Slice and eat!</p>

			<content:encoded><![CDATA[<p>Pizza doesn&#8217;t have to be tomato sauce, cheese and meat.  Give this unique vegetable pizza a try.  It uses a spinach-artichoke dip for the sauce, giving it a flavor that you&#8217;re sure to love.</p>
<h2>Spinach and Artichoke Dip:</h2>
<h2>Ingredients:</h2>
<p>1 (10 ounce) box frozen, chopped spinach, thawed<br />
1 (14 ounce) can artichoke hearts, drained and rough chopped<br />
1 cup shredded parmesan/Romano cheese blend<br />
1/2 cup shredded mozzarella cheese<br />
10 ounces prepared Alfredo sauce<br />
1 teaspoon minced garlic<br />
4 ounces (1/2 package) softened cream cheese.</p>
<h2>Directions:</h2>
<p>1. Combine ingredients thoroughly in a bowl and spread mixture into a small baking dish.<br />
2. Bake in an oven preheated to 350 degrees F for 30 minutes or until cheeses are bubbling and melted.<br />
3. Serve as sauce for the pizza, or as dip for bread or chips.</p>
<h2>Pizza</h2>
<h2>Ingredients:</h2>
<p>• 1 10 inch flour tortilla<br />
• butter-flavor oil, as needed<br />
• 1/2 cup sliced mushrooms<br />
• black pepper, to taste<br />
• granulated garlic, to taste<br />
• salt, to taste<br />
• 4 ounce Hot Spinach and Artichoke Dip (recipe above)<br />
• 1/4 cup tomatoes, diced<br />
• 1/2 teaspoon Italian seasoning<br />
• 1/2 cup mozzarella cheese, shredded</p>
<h2>Directions:</h2>
<p>1. In a hot sauté pan, place sliced mushrooms and butter-flavor oil and season with salt, pepper and garlic. Cook until hot.<br />
2. Brush tortilla with oil and place on griddle.<br />
3. Spread spinach and artichoke dip evenly on top of tortilla to within 1/2 inch of the edge.<br />
4. When cooked, top with mushrooms, Italian seasoning and diced tomatoes.<br />
5. Sprinkle shredded mozzarella cheese over pizza and remove from griddle and place on a pizza pan in an oven preheated to 350 degrees F.<br />
6. Remove from oven when cheese is melted and top with shredded Parmesan/Romano cheese.<br />
7. Cut into wedges and serve.</p>

<p>1/4       cups pesto sauce</p>
<p>2               cups spinach leaves, washed and dried, chopped</p>
<p>1               cup mushrooms, thinly sliced</p>
<p>1               cup roasted red pepper, chopped</p>
<p>1               zucchini, sliced</p>
<p>4               ounces mozzarella cheese, park skim milk, shredded</p>
<p>1               chicken and apple-sausage link, or your favorite low-fat sausage, thinly sliced</p>
<p><strong>Directions:</strong></p>
<p>Preheat oven to 450 degrees.</p>
<p>Lightly oil a baking sheet and dust with cornmeal, or place a pizza stone on the bottom rack in the oven to allow it to preheat.</p>
<p>Place pizza crust onto prepared baking sheet or a pizza paddle if you are using a pizza stone.  Spread pesto sauce in a thin layer over the entire top of the curst.  Top with remaining ingredients.</p>
<p>Bake on bottom rack of preheated oven for 8-10 minutes, or until the vegetables have softened, the cheese is melted, and the crust is crispy and lightly browned.  Cut into five generous slices and serve.</p>
