Sometimes things just don’t work out the way we planned. Friday we bought hamburg buns so we could have sloppy joes Sunday night and I thought I’d make burgers tonight. Sunday night we made up the sloppy joes and when we pulled out the buns, they were moldy. Sunday was the 5th, they were dated sell by the 7th, and we had to trash them. Now what?

I dug around and came up with this great hamburg bun recipe and made them this afternoon. The only way we could describe them was delicious. They were really easy to make and I think we’ll be having homemade buns quite often in the future.

Quick and Easy Burger Buns

Ingredients
3/4 to 1 cup lukewarm water
2 tablespoons butter
1 large egg
3 1/2 cups all-purpose flour
1/4 cup sugar
1 1/4 teaspoons salt
1 tablespoon instant yeast

Directions

Mix and knead all of the dough ingredients—by hand, mixer, or bread machine—to make a soft, smooth dough.

Cover the dough, and let it rise for 1 hour, or until it’s doubled in bulk.

Gently deflate the dough, and divide it into 8 pieces. Shape each piece into a round 1″ thick (more or less); flatten to about 3″ across. Place the buns on a lightly greased baking sheet, cover, and let rise for about an hour, until very puffy.

Brush buns with either melted butter or with egg wash (1 egg beaten with 1 tablespoon water.

Bake the buns in a preheated 375°F oven for 12 to 15 minutes, till golden. Cool on a rack.

If you like, when you brush the butter/egg wash, you can top them with sesame seeds.

I think next time I make them, I’m going to cut them out with a glass if I have one that makes the right size round bun.

Those of you who are real meat-lovers will love the combination of bacon, sausage and ground pork. If you want something not quite as bold, use lean ground beef instead of the ground pork. To tone it down even more, substitute mozzarella for the asiago cheese.

INGREDIENTS

one large sweet onion, sliced

1 Tablespoon butter

1/2 Pound country sausage

8 strips bacon, chopped

1/4 Cup parsley, chopped

1/2 teaspoon dried thyme

salt and pepper

Asiago cheese

6 sandwich buns

DIRECTIONS

Cook the onion slices in butter until tender. Set aside.

While the onions are cooking, mix the ground pork, sausage, chopped bacon, parsley and thyme together in a large bowl. Form patties.

Cook the burgers and top with cheese.

Place burger on a prepared bun and top with onion.

One of my favorites when we go out for Chinese food is Chicken and Broccoli. While not the same thing, this chicken and broccoli-parmesian reminds me of it, and tastes just as good, if not better. Of course this one is a pasta recipe while the other isn’t but I think you’ll like it.

Ingredients
8	ounces dried penne pasta (about 2 1/2 cups)
3	cups fresh broccoli florets
1	pound skinless, boneless chicken breast, cut into bite-size pieces
1	teaspoon adobo seasoning
2	tablespoons olive oil
1	clove garlic, minced
1/4	cup light mayonnaise
1/8	teaspoon black pepper
2	tablespoons shaved Parmesan cheese

Directions
1.	In a Dutch oven cook pasta according to package directions, adding broccoli for the last 5 minutes of cooking. Drain well. Return to hot Dutch oven.
2.	Meanwhile, in a medium bowl combine chicken pieces and adobo seasoning; toss to coat. In a large skillet heat oil over medium-high heat. Add garlic; cook and stir for 30 seconds. Add chicken; cook for 3 to 4 minutes or until chicken is no longer pink, stirring occasionally.
3.	Add chicken to drained pasta and broccoli in Dutch oven. Stir in mayonnaise and pepper. Cook over low heat until heated through, stirring occasionally.
4.	To serve, sprinkle with Parmesan cheese.
