There must be a million chocolate chip cookie recipes floating around out there. I’m sure most of us learned how to make chocolate chip cookies using the old standby Toll-house cookie recipe that appears on the Nestle Toll-house Chocolate Chip package. Sometimes though,we want to make something different though. Back when I was a Watkins dealer I came across this recipe and it’s become one of our favorites.

Ingredients:

1/2 cup sugar

1/2 cup brown sugar

1/3 cup butter, softened

1/3 cup vegetable shortening

1 egg

1 teaspoon vanilla

1 1/2 cups all-purpose flour

1/2 teaspoon baking soda

1/2 teaspoon salt

1 package (6 oz) semisweet chocolate chips

1/2 cup chopped nuts (optional)

Directions:

Combine sugars, butter, shortening, egg and vanilla

Stir in remaining ingredients

Drop dough by rounded Tablespoonfuls onto and ungreased cookie sheet

Bake at 375 for 8 to 10 minutes or until lightly browned

Cool slightly before removing from cookie sheet to a wire rack to cool.

This makes about 40 great cookies.

Ingredients:

Pastry:
1/2 cup butter, softened
4 ounces cream cheese, slightly softened
1/2 teaspoon salt
1/2 cup confectioners’ sugar
1 1/2 cups flour

Filling:

1/4 cup cherry preserves
1/3 cup dried cherries, chopped
1/4 cup mini semisweet chocolate chips
Milk and sugar for glaze

Directions:

Cream the butter and cream cheese in a large bowl until well blended. Stir in the salt and confectioners’ sugar. Add the flour a third at a time, mixing well after each addition.

Form the dough into a ball and place it on a floured surface. With floured hands, knead it until smooth, then divide it into 2 balls. Flatten each into a 3/4 inch disk. Cover both in plastic wrap, then chill them for at least 2 hours.

Line a large baking sheet with a piece of parchment paper or lightly greased aluminum foil. Set the sheet aside.

Ona piece of lightly floured waxed paper, roll one of the chilled disks into a 12 inch circle, dusting the dough wtih flour to prevent the rolling pin from sticking. Slide the waxed paper with the pastry onto another baking sheet and chillit for another 10 minutes. Repeat the folling and chilling with the other pastry disk.

Spread half of the cherry preserves over ne of the rolled disks, leaving a 1/2 inch border and a 2 inch circle in the center uncovered to prevent jelly from oozing out later. Sprinkle half of the chopped cherries and half of the cholcolate chips evenly over the preserves. With a pastry wheel or a sharp knife, cut the dough into 12 wedges, as you would a pie. Starting at the wide end, roll up each wedge like a carpet. Place each rugelach point down on the lined baking sheet, pulling the sides down a little to form a crescent. Chill the cookies on the baking sheet for 10 minutes while you heat the oven to 350 degrees. Meanwhile, assemble the second bath of rugelach and chill it.

Lightly brush the chilled cookies with milk and sprinkle on a bit of sugar, then bake them on the center oven rack until lightly golden , approximately 25 minutes. Cook them briefly on the sheet, then transfer them to a wire rack with a spatula.

Makes 2 dozen.

Ingredients:

1 1/2 cups (3 sticks) unsalted butter, softened
1 cup confectioners; sugar
2/3 cup granulated sugar
1 Tablespoon Vanilla Extract
3 cups flour
1 teaspoon salt
1 teaspoon Baking Powder
1/4 cup Cocoa

Directions:

Using a wooden spoon, cream the butter until it’s smooth. Stir in the sugars and vanilla
extract until they’re evenly blended. In a separate bowl, whisk together the flour, salt and baking powder. Add the dry ingredients to the cream mmixture one third at a time, stirring after each addition, until the dough is evenly blended.

Set aside half of the cookie dough. Add the cocoa powder to the remainng dough and stir until it is fully incorporated.

Divide the chocolate dough in half. Place each half on a large piece of plastic wrap, pat it into a 1/2 inch thick square and then wrap it in the plastic. Repeat the process for the vanilla dough. Refrigerate the 4 squares until firm, about 1 to 2 hours.

Unwrap one piece of the chilled vanilla dough, leaving it on the plastic, Cover it with a second piece of plastic wrap, then roll it into a rectangle measuring about 9 by 7 inches. If the dough gets too soft and difficult to roll, slide it onto a baking sheet and refrigerate it until it’s firm again, about 5 to 10 minutes. Unwrap a piece of the chocolate dough, cover it with another piece of plastic and roll it into an 8 by 7 inch rectangle.

Remove the top piece of plastic wrap from both rolled doughs and invert the chocolate dough on top of the vanilla dough, lining up 3 sides and leaving about 1 inch of vanilla dough exposed on one side. Starting at the opposite side, lift the vanilla dough by the plastic wrap underneath it and snugly roll up both layers into a log, peeling sway the plastic wrap as you go. Wrap the log in the plastic and refrigerate it for at least 2 hours. Repeat the process with the 2 other pieces of dough.

Heat the over to 350 degrees. Line 2 shiny, heavy baking sheets with parchment paper. Unwrap one of the logs and slice it into 1/4 inch thick rounds. Arrange the slices on the parchment about 1 inch apart and bake them for about 13 minutes. When done, they’ll still be a little soft to the touch–the cookies will have a better texture if you don’t let their edges brown.

Leave the cookies on the sheet for 1 minutes, then transfer them to a wire rack to cool. Slice and bake the second log as the first.

Makes about 4 dozen cookies.

Tip: To make nice slices try the following:

Slip a long piece of unflavored dental floss (about 20 inches) beneath the dough log.

Pull the ends up and over the log, crossing them.

Wrap the ends of the floss around your fingers and pull in opposite directions.
