John made this chili for our church’s chili cookoff. It wasn’t the winner but did take third place.
Ingredients:
2 pounds coarsely ground beef
1 medium red onion, chopped
1 tablespoon minced garlic
1 26 ounce jar of salsa, medium heat
2 15 ounce cans chili beans
2 15 ounce cans black eye peas
2 tablespoon Watkins garlic
1 tablespoon Watkins Chili Powder
1 tablespoon Kosher salt
1 tablespoon Watkins Meat Magic
Directions:
- Brown the ground beef.
- Add the chopped onion and garlic and cook until transparent.
- Add the salsa and simmer 15 minutes.
- Add the remaining ingredients and simmer for 3 hours.

Saturday was the Ladies Banquet (Mother’s Day Banquet) at church and it was a lot of fun. Our theme this year was Around the World with dishes from many different countries and continents. I chose Ireland since I have Irish in my background. To name a few of the countries represented there was Mexican, Italian, American, Chinese, and Hungarian. The following recipes, Irish Soda Bread and Irish Chicken Stroganoff are the dishes I took.

We had our Thanksgiving dinner with church today and I made Cranberry Salad. I got this recipe 35 years ago and most people like it, especially those who don’t care for cranberries.
Since there were several women that requested me to write the recipe for them, I decided that it would be a good recipe to add here. It is very simple and tastes so good!
INGREDIENTS
- 1 pound cranberries
- 1 20 ounce can crushed pineapple, do not drain
- 2 cups sugar
- 2 cups boiling water
- 2 3 ounce packages cherry jello
- 1 cup walnuts, chopped
DIRECTIONS
- Grind the cranberries and add the pineapple juice and sugar.
- Mix well and let sit for two hours.
AFTER 2 HOURS
- Mix the boiling water and jello.
- Let cool.
- Mix in the cranberry mixture and add the walnuts
- Store in refrigerator until the jello sets up.

Last Sunday night in church we had a presentation about evolution. I found it to be very interesting. It was a video put out by Answers in Genesis. The scientist who narrated it was a staunch evolutionist until he started studying and came to realize that the science couldn’t back up what he believed. It was an older video since I see they have Volume 3 on the Answers in Genesis website.
Last year we spent several weeks going through the “Answers Academy”, another course put out by AiG. It was a 13 week course in looking through at the world from a biblical viewpoint. It dealt with things like geology, geography and evolution. Very interesting material. If you ever get a chance to see any of the stuff from AiG you should. They have some really good stuff, and it’s all done by scientists.
But enough about that, I’ve got 40 pounds of potting soil screaming at me to get my annuals planted so I’m off to play in the dirt.
