Who doesn’t like blueberries? Here’s an easy recipe that will have them begging for more.
Ingredients:
1 1/2 cups quick-cooking rolled oats
1 cup all purpose flour
3/4 cup packed brown sugar
3/4 cup butter or margarine
1 cup frozen blueberries
1/2 cup blueberry, raspberry or strawberry perserves
1 t finely shredded lemon peel
Directions:
Line an 8x8x2 inch baking pan with foil; set aside. Combine oats, flour and brown sugar in a bowl. Cut in butter or margarine till pieces are size of small peas. Reserve 1 cup of the mixture.
Press remainng oat mixture into the bottom of preapred baking pan. Bake ina 350 degree oven for 25 minutes.
Combine frozen blueberries, preserves and lemon peel in a medium bowl. Carefully spread over baked crust. Sprinkle with reserved oat mixture. Bake for 30 minutes mor till top is golden. Cool in pan on a wire rack. Cut into bars.
