Bacon Cheeseburger Rice

Here’s a tasty dish that you can make ahead of time and freeze or serve it immediately.

INGREDIENTS

  • 4 to 6 cups cooked rice (depending on thickness you want)
  • 1 lb. ground beef
  • 3 slices bacon, cooked crisp and crumbled
  • 1 can (10 3/4 oz.) condensed tomato soup, undiluted
  • 1 package onion soup mix
  • 2 c. shredded cheddar cheese

DIRECTIONS:

  1. Brown and drain beef.
  2. While beef is cooking, mix together soup, onion soup mix, bacon pieces and cheese.
  3. Add to browned hamburger.
  4. Simmer on low until cheese is just melted, and soup is jut to boiling.
  5. Add rice and combine thoroughly.

Serve, or allow to cool and ladle into 1-gallon freezer bag and freeze.

To serve, allow to thaw overnight in refrigerator and reheat on stovetop or in a microwave.

You can also freeze this in a reusable casserole dish for easier thawing/cooking.
