Aunt Blanche’s Peach Cobbler

This is a quick dessert that would go well with Baked Beef Stew.

Ingredients:

1/2     cup flour
3/4     cup sugar
2         eggs
1         stick margarine or butter (1/2 cup)
1         teaspoon Watkins Vanilla
1         14.5 ounce can of peaches, drained or 2 fresh peaches peeled and sliced
1/2     cup toasted pecans

Directions:
Melt margarine or butter, add other ingredients. Beat well. Pour in baking dish. Spoon cooked fruit over batter. Bake in medium oven (325 to 350 degrees) until brown.
Sprinkle batter with toasted nuts for added flavor.

I have used canned fruits and fresh apples, just simmer apples til tender then mix as above.
