Apple Pie Sandwiches

I came across a really tasty looking recipe posted by Bridget over at …”And Miles to Go Before I Sleep…” and just had to give it a try. Of course, I had to change it a little to my tastes.

  • 2 C peeled and diced Red Delicious apples
  • 1 C water
  • 1/2 C plus 1 TBSP sugar, divided
  • 5 tsp cornstarch
  • 1/2 tsp Watkins Cinnamon (01115)
  • 1/4 tsp Watkins Nutmeg (01937)
  • 1/4 tsp Watkins Apple Bake Seasoning (01961)
  • 2 tsp lemon juice
  • 12 slices day-old bread
  • 3 eggs
  • 2/3 C milk
  • 2 tsp Watkins Original Double-Strength Vanilla (01008)

 

  1. In a large saucepan, cook apples and water over medium heat for 10 minutes or until apples are tender.
  2. Combine 1/2 cup sugar, cornstarch, cinnamon, nutmeg and Apple Bake Seasoning; stir into apple mixture.
  3. Bring to a boil and cook and stir for 2 minutes or until thickened. Remove from the heat; stir in lemon juice.
  4. Spread six slices of bread with 1/3 C filling each; top with remaining bread.
  5. In a shallow bowl, beat the eggs, milk, vanilla and remaining sugar. Dip sandwiches in egg mixture.
  6. Cook on a lightly greased hot griddle until golden brown on both sides.

Makes 6 servings

According to Bridget, you can top them with confectioners sugar if you want. We didn’t.
