A Weekend Delight: Taco Twist Soup

It’s the weekend so why not just make soup for supper?  Here’s a great one that’s quick and easy.

Ingredients:

  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 t olive oil
  • 3 cups Watkins Beef Soup broth
  • 1 can (15oz) black beans, rinsed and drained
  • 1 can (14.5 oz) diced tomatoes
  • 1 1/2 cup picante sauce
  • 1 cup spiral pasta
  • 1 small green pepper, chopped
  • 2 t Watkins Chili Powder
  • 1 t Watkins Cumin

Directions:

  1. Prepare the broth according to the label directions.
  2. In a large saucepan, saute onion and garlic in oil until tender.
  3. Add the broth, beans, tomatoes, picante sauce, pasta, green pepper and seasoning.
  4. Bring to a boil, stirring frequently.
  5. Reduce heat; cover and simmer for 10-12 minutes or until pasto is tender, stirring occasionally.

Serve with shredded cheese and sour cream and chips.

If your family wants meat, this is also good when you add browned hamburger or Italian Sausage.
