With the holiday cooking heating up, no pun intended, I thought I’d share a couple of easy recipes for when you have friends drop by.
Grandma Paul’s Caramel Corn
Normally, I share recipe’s that are from my kitchen, or those of my friends and family but this one I just have to share with you. It’s from Paula Dean, of Paula Dean’s Home Cooking on the Food Network. This is the best Caramel Corn I’ve ever tasted.
Ingredients:
- 1 cup butter
- 2 cup packed brown sugar
- 1 teaspoon salt
- 1/2 cup light corn syrup
- 1 teaspoon baking soda
Directions:
- Preheat oven to 200 degrees.
- On medium heat combine butter, brown sugar, salt and light corn syrup and boil for 5 minutes.
- Remove from heat and stir in baking soda.
- Pour over 8 quarts popped corn. Stir to coat.
- Bake in large roaster to 1 hour, stirring every 15 minutes.
- Spread on wax paper to dry.
Off course, people might get a little thirsty eating the caramel corn so here’s a delicious eggnog to go with it.
Eggnog
Ingedients:
- 1/4 cup sugar
- 1/4 teaspoon Watkins Cinnamon
- 1/4 teaspoon Watkins Ginger
- 1/4 teaspoon Watkins Ground Cloves
- 6 eggs, well beaten
- 2 quarts orange juice, chilled
- 1/2 cup lemon juice
- 1 quart vanilla ice cream, slightly softened
- 1 bottle (28 oz) ginger ale (chilled)
Directions:
- Beat sugar, cinnamon, ginger and cloves into eggs.
- Blend in orange juice, lemon juice and ice cream.
- Add ginger ale, just before serving.
- Sprinkle nutmeg on top.
Makes 1 gallon.
