Like Fries but hate the fat. Try these.

  • 2 zucchini, each cut into 16 wedges
  • 3 large egg whites
  • 1/2 t salt
  1. Preheat oven to 500° F.
  2. In a large bowl, beat egg whites until stiff and frothy.
  3. Add the zucchini wedges and toss to coat.
  4. Let sit for 5 minutes.
  5. Arrange zucchini, cut side down, on a baking sheet covered in foil and sprayed with Watkins Cooking Spray (item #01040).
  6. Bake the wedges, turning once, for about 15 minutes.
  7. Let stand for about a minute before serving.

It’s been a hectic few weeks and I apologize for not posting but we’re preparing to move and I’ve just not had time to post. Spring has finally arrived and everything is turning green.

Here’s a wonderful chicken recipe for those summer picnics.

  • 3 cups all-purpose flour
  • 1 tbsp Watkins Seasoning Salt (#01992)
  • 1 tbsp Watkins Garlic Granules (#01931)
  • 1 tbsp Watkins Onion Granules (#01939)
  • 1 tbsp Watkins Black Pepper (#01140)
  • 2 eggs
  • 4 cups buttermilk
  • 1/3 cup Watkins Original Barbecue Sauce Concentrate (#01164)
  • 3 tbsp Watkins Steak Sauce (#01169)
  • 1 tbsp Watkins Spicy Garlic Soy Sauce (#01161)
  • 1 whole chicken, cut into pieces (or 6 skinless, boneless chicken breast halves)
  • 2 cups Watkins Original Grapeseed Oil (#01535)
  1. In a large, shallow dish, combine flour and next four (dry) ingredients.
  2. In a separate bowl, beat eggs; whisk in buttermilk and next three (wet) ingredients.
  3. Dredge chicken in wet mixture, then in seasoned flour, repeating at least once.
  4. Heat oil in large, deep-sided skillet to 375°F/190°C.
  5. Fry chicken in hot oil until golden brown on both sides, about 10 minutes per side.
