Like Fries but hate the fat. Try these.
- 2 zucchini, each cut into 16 wedges
- 3 large egg whites
- 1/2 t salt
- Preheat oven to 500° F.
- In a large bowl, beat egg whites until stiff and frothy.
- Add the zucchini wedges and toss to coat.
- Let sit for 5 minutes.
- Arrange zucchini, cut side down, on a baking sheet covered in foil and sprayed with Watkins Cooking Spray (item #01040).
- Bake the wedges, turning once, for about 15 minutes.
- Let stand for about a minute before serving.

It’s been a hectic few weeks and I apologize for not posting but we’re preparing to move and I’ve just not had time to post. Spring has finally arrived and everything is turning green.
Here’s a wonderful chicken recipe for those summer picnics.
- 3 cups all-purpose flour
- 1 tbsp Watkins Seasoning Salt (#01992)
- 1 tbsp Watkins Garlic Granules (#01931)
- 1 tbsp Watkins Onion Granules (#01939)
- 1 tbsp Watkins Black Pepper (#01140)
- 2 eggs
- 4 cups buttermilk
- 1/3 cup Watkins Original Barbecue Sauce Concentrate (#01164)
- 3 tbsp Watkins Steak Sauce (#01169)
- 1 tbsp Watkins Spicy Garlic Soy Sauce (#01161)
- 1 whole chicken, cut into pieces (or 6 skinless, boneless chicken breast halves)
- 2 cups Watkins Original Grapeseed Oil (#01535)
- In a large, shallow dish, combine flour and next four (dry) ingredients.
- In a separate bowl, beat eggs; whisk in buttermilk and next three (wet) ingredients.
- Dredge chicken in wet mixture, then in seasoned flour, repeating at least once.
- Heat oil in large, deep-sided skillet to 375°F/190°C.
- Fry chicken in hot oil until golden brown on both sides, about 10 minutes per side.
